Blue corn tortillas on a bed of Spanish rice stuffed with Chihuahua cheese, purple cabbage & marinated shrimp. But that is just the beginning.

We’re topping those enchiladas with two sauces: one made with Red Bell Peppers and the other with Green Bell Peppers.

Oh, we put some Queso Fresco, Sour Cream & Cilantro on top too!
